Oven made with rotary base has heat source connected to cooking chamber via passage that can be closed by shutter. Cooking chamber is enclosed between dome, circular wall and rotary floor made from assembled bricks of refractory material molded with tenon and mortise joints. Bricks have thermal inertia that maintains cooking temperature in oven after shutter has been closed without additional heat input. The oven (100), made with a rotary base (350), has a heat source (400) connected to its cooking chamber (300) via a passage (332) that can be closed by a shutter (430) once the cooking temperature is reached. The cooking chamber is enclosed between a dome (320), a circular wall (310) and the rotary floor made from assembled bricks (302) of a refractory material molded with tenon and mortise joints. The shape of the dome reflects heat onto the food being cooked, and the bricks have a thermal inertia that maintains the cooking temperature in the oven for several hours after the shutter has been closed without additional heat input. In addition, the inner surfaces of the dome and circular wall have a coating (306), applied in liquid form, that provides thermal insulation and a smooth finish.
