摘要 PROBLEM TO BE SOLVED: To provide a method for producing a food by which the food produced through a heating step can suitably be produced by using an oil-in-water emulsified composition containing a starch. SOLUTION: The oil-in-water emulsified composition containing starch particles having >30 μm particle diameter and changed into a gel with a thermoplastic gel having >=37 deg.C melting point is heated, dissolved, further cooled and solidified. The heating is preferably carried out at a temperature not lower than the gel melting point of the oil-in-water emulsified composition. The cooling is preferably carried out at a temperature not higher than the gelation starting temperature of the oil-in-water emulsified composition.
