PROBLEM TO BE SOLVED: To provide a health food raw material which has an excellent active ingredient (zerumbone)-digesting absorption property, a low moisture-absorbing property and an excellent handling property, to provide a method for producing the same, to provide a health food raw material which has long period storage stability in addition to the above-described effects, and to provide a method for producing the same. SOLUTION: This pulverized food raw material contains the extract of Zingiber zerumbet Smith whose cell walls are lysed. The extract of Zingiber zerumbet Smith preferably contains zerumbone as a main ingredient. The pulverized food raw material preferably contains the zerumbone and a host molecule wherein the zerumbone is included in the host molecule. The pulverized food raw material can be obtained by treating the pulverized product of the Zingiber zerumbet Smith with a fiber hydrolase, adding the host molecule to the obtained hydrolase-treated product, and then subjecting the mixture to a vacuum lyophilization treatment. |
