PROBLEM TO BE SOLVED: To provide a concentrated liquid (sugar content: 8 to 70 Brix) which is the concentration product of a maple sap (sugar content: 1.5 to 4 Brix), holds the natural ingredients, refreshing sweetness, refreshing flavor, and a colorless transparent appearance, ensures safety on consumption as a beverage, and has improved storability, and to provide a new type beverage comprising the concentrated liquid and one or more other beverage raw materials. SOLUTION: This concentrated liquid which is used for beverages and is obtained by concentrating a maple sap by a membrane separation method and then sterilizing the concentrated sap at low temperature and at pH 4.5 or lower, and the frozen product of the concentrated liquid. The beverage comprising the concentrated liquid for the beverages or its frozen product and one or more other beverage raw materials. The beverage prepared by mixing the maple sap concentration liquid concentrated by the membrane separation method with one or more other beverage raw materials and then thermally sterilizing the mixture. Therein, the liquid concentrated by the membrane separation method may further be concentrated under reduced pressure. |
