PURPOSE: A method for specifically separating a natural antioxidant, Quercetin, using nano/micro encapsulation of cyclodextrin is provided, thereby simplifying the separation process and preparing high purity Quercetin. CONSTITUTION: The method for selectively separating a natural antioxidant, Quercetin, using nano/micro encapsulation of cyclodextrin comprises the steps of: pulverizing onion, apples, grapes, kales, broccoli and by-products thereof; diluting the pulverized ingredients in hot water or lower alcohol; adding an appropriate amount of cyclodextrin or derivative thereof into the diluted solution to selectively encapsulate Quercetin; and recovering the encapsulated Quercetin and re-extracting it with ethanol, wherein cyclodextrin is added in an amount of 1 to 30%(w/v); and agitation, heating or ultrasonic wave is optionally applied to the cyclodextrin-added diluted solution.
