PURPOSE: Provided is a process for preparing red pepper paste by using strawberries and dextrose syrup rather than starch and malt extracts. Therefore, the red pepper paste has the taste and flavor peculiar to strawberries and contains nutrients, such as vitamin C thereof. CONSTITUTION: The process for preparing red pepper paste by using strawberries and dextrose syrup comprises the steps of; heating and liquifying dextrose syrup; selecting, washing and crushing strawberries; mixing the strawberries and the dextrose syrup then heating the mixture for 5 minutes; mixing the mixture with red pepper paste; and naturally fermenting and maturing it for 1-2 months.
