PURPOSE: Provided is a manufacturing process of kimchi using seaweeds by processing seaweeds, such as brown seaweed, sea tangle, etc., and mixing with conventional kimchi seasoning stuffs. CONSTITUTION: The manufacturing process of kimchi using seaweeds comprises the steps of: parboiling seaweeds at low temperature then dewatering them; trimming the seaweeds then drying to water content of 30-50%; dipping the dried seaweeds in fresh-water for 5-10 minutes then dewatering them to water content of 70-80%; mixing them with kimchi seasoning stuffs; and mixing the mixed kimchi seasoning stuffs with salted chinese cabbage then fermenting and maturing.
