Rapid chill chamber for bread rolls in dough form has radial ventilator

Warm bread dough is sub-divided into bread-roll sized portions and immediately transferred on a multi-shelf trolley trays into a rapid cooling chamber. The chamber has a radial ventilator which is located immediately opposite the second of two air outlets. The chamber has a second axial ventilator for air temperature control. The air inlet apertures in the chamber rear face total less than two per cent of the chamber rear face surface area (7b).
