PURPOSE: Provided is a manufacturing process of kimchi using chitosan which particularly is decomposed in acetic acid then added to kimchi seasoning stuffs. CONSTITUTION: The manufacturing process of kimchi using chitosan is characterized by the steps of: dissolving 0.1-3 parts by weight of chitosan to a solution having pH 3.5-3 by mixing and stirring it at 30-50deg.C; stabilizing the mixed solution at 20-30deg.C; adding 1-5 parts by weight of kimchi seasoning stuffs and mixing them; and mixing the mixed kimchi seasoning stuffs with salted chinese cabbage.
