PROBLEM TO BE SOLVED: To obtain a new Kimchi health food storage stability-improving agent which can enhance an effect for improving the storage stability of Kimchi as a health food and has excellent safety and excellent profitability without deteriorating the taste, flavor and the like of the Kimchi. SOLUTION: This Kimchi storage stability-improving agent contains lysozyme and calcium carbonate. The lysozyme is preferably obtained from egg albumen as a raw material, and the calcium carbonate is preferably selected from eggshells and shells such as oyster shells as a raw material.
