PROBLEM TO BE SOLVED: To provide a technique for raw coffee bean production, with which coffee beans are recovered to an original fresh state, bean flavor and special quality characteristic of coffee beans can be drawn out to maximum and a use thereof for a coffee beverage in a sealed container. SOLUTION: The raw coffee beans are obtained by removing the surface layer part and a silver skin on the outside of the surface layer part. This method for raw coffee bean production is characterized in that admixtures are removed by dry separation from a raw coffee bean material having the surface layer part of raw bean and the silver skin on the outside of the surface layer part exposed to the surface and the raw coffee beans are repeatedly subjected to a plurality of kinds of polishing processes to remove the surface layer part and the silver skin of the raw coffee bean. The method for raw coffee bean production is characterized in that in a preferable state, a plurality of kinds of the polishing processes comprise a process for roughly shaving the surface layer part and the silver skin of the raw coffee bean by a means (slate conveyor, etc.), for roughly shaving the surface layer part and the silver skin of the raw coffee bean material.
