PURPOSE: A germination method of unpolished rice is provided to improve diet and health by cooking unpolished rice smoothly and stickily like polished rice and removing peculiar smell of germinated unpolished rice. CONSTITUTION: A germination method of unpolished rice comprises the steps of washing unpolished rice(S10), putting the unpolished rice into a hot water tank(S20), changing hot water in the water tank periodically(S30), putting the rice into a germination room(S40), spraying hot water in the unpolished germination room periodically(S50), checking the germinated length of the unpolished rice(S60), if the germinated length of the unpolished rice corresponds to the preset length, washing the unpolished rice with cold water(S70), digesting the unpolished rice in high-temperature water(S80), drying and packing the unpolished rice(S90). |
