PURPOSE: A preparation of processed meat products containing chitosan is provided, thereby preventing human aging and increasing immunity to increase human health. CONSTITUTION: The preparation of processed meat products containing chitosan comprises the steps of: cutting meat and adding 1.5 to 2.5 wt.% of chitosan into cut pieces of meat, wherein the chitosan is prepared from Crustacea, arthropod such as crabs and shrimps, shellfishes, insects, fungi and mushrooms by collecting shells thereof, removing protein and calcium from therefrom to prepare natural chitin, and removing acetyl from the natural chitin. Alternatively the processed meat products containing chitosan are prepared by cutting meat, adding seasoning agent into the cut pieces of meat, and adding 1.5 to 2.5 wt.% of chitosan into the seasoned meat.
