FIELD: technology of conservation with using carbohydrate-containing concentrates. SUBSTANCE: method involves preparation of raw material, its saturation with carbohydrates in concentrated clarified fruit or berry juice up to preset content of dry substances, separation from liquid phase and drying up to preset humidity. Saturation with carbohydrates is carried out at temperature below than that of boiling of concentrated juice up to content of dry substances 50-75% by mass. Introduced additionally is preparation produced by successive extraction of biomass of Pythium insidiosum micromycete with nonpolar extracting agent under above-critical condition with water, alkali, water, acid, alkali and water with the following combination of the first extract with solid residue up to content of dry substances in raw material equal to 50-55% by mass, and drying is carried out up to moisture content of 20-25%. EFFECT: improved organoleptical properties of final product and reduced losses of native biologically active substances. 3 cl |
