ANTIOXIDANT FUNCTIONAL OIL COMPOSITION CONTAINING MONASCUS PURPUREUS EXTRACT

PURPOSE: A process for preparing a new functional oil composition by agitating Monascus with oil and then filtering the extracted residue containing Monacolin K is provided. Whereby, the oil composition lowers cholesterol level and has antioxidant effects. CONSTITUTION: About 0.5 to 3 parts by weight of Monascus powder having a Monacolin K content of 0.4 to 3.0% is agitated with 100 parts by weight of oil at 170 to 175deg.C to extract Monacolin K as a useful component. The extracted residue containing Monacolin K is further filtered and then decolorized. The oil is preferably selected from soybean oil, corn oil and vegetable seed oil.
