PROBLEM TO BE SOLVED: To provide a method and apparatus for drying organic waste whereby an organic waste containing water can be dried while minimizing the amount of an odorous gas generated. SOLUTION: A metal-made water evaporation container 1 is used which comprises a ceiling lid section 11 and a cylindrical side-wall section 13 having a reverse conical bottom section 12. On the ceiling lid section 11, a supply port 14 connected to a supply feeder 21 for an organic waste and a gas exhaust port 15 connected to an automatic pressure governor 41 are installed. In the water evaporation container 1, a stirrer blade 52 is installed. Around the water evaporation container 1, a heater capable of heating up to 374 deg.C is installed. The bottom section 12 of the water evaporation container 1 has a reverse conical shape, and at its lower end, a contents discharge port having an up-and-down operable open/close plug 71 is formed.
