PROBLEM TO BE SOLVED: To provide a method for producing sausage with a casing, with which deformation of sausage caused by connection of twisted parts of sausage is prevented, the problem of deformation in the conventional smoking process is eliminated and production efficiency can be improved. SOLUTION: This method for producing sausage with a casing is characterized in that meat paste is packed into natural intestine or an artificial edible casing to give sausage, which is twisted to form twisted parts sealing the meat paste at proper intervals, cut at the twisted parts and before loosening and opening of the twisted parts, the sausage is immersed in warm water and boiled. The method is characterized in that the sausage obtained by packing meat paste into natural intestine or an artificial edible casing is immersed in warm water containing a smoke component and/or a fragrance applying component and/or a coloring component, boiled, dried, heated and cooled.
