PROBLEM TO BE SOLVED: To obtain a fatty acid polyglycerol ester excellent in effect for improving the egg absorbing speed of an oil and provide the oil using the fatty acid polyglycerol ester or oil-containing foods good in palatability and taste. SOLUTION: As the egg absorbance-improving agent, the fatty acid polyglycerol ester comprising one or more species of 12-22C saturated fatty acids and unsaturated fatty acids as the main constituent fatty acids is used. The oil-absorbing speed is increased by adding the fatty acid polyglycerol ester.
