PROBLEM TO BE SOLVED: To provide a fixing device control method by which control of a heating element can be facilitated and an image defect caused by irregular temperature can be prevented, and to provide a fixing device. SOLUTION: In this method for controlling the fixing device 11 equipped with a heat roller 13 fixing an image on recording paper 20, a temperature detection sensor 19 detecting the temperature of the roller 13 or the periphery of the roller 13, a recording paper detection sensor 17 detecting the paper 20 passing through the roller 13, and a fixing control part 10 performing the temperature control of the roller 13 by energizing the roller 13; the fixing control part 10 performs the temperature control for keeping the temperature of the roller 13 in the specified temperature based on the detected temperature by the sensor 19 in every specified time. Then, the temperature control of the roller 13 is performed in every specified time shorter when the sensor 19 detects the paper 20 than when it does not detect the paper 20.
