The present invention relates to a dough forming apparatus, preferably cookies, biscuits, shortcake, shortbread forming apparatus, said apparatus comprising at least one roller (1), said roller having on its surface cavities (2) adapted to be filled with dough whereby dough is formed in pieces, said apparatus further comprising a counteracting means (3) in rotational contact with said roller (1) whereby feeded dough is forced in the cavities and transport means (4) in rotational contact with said roller whereby dough formed in pieces is transported away from said roller, said apparatus further comprising first dough feeding means in form of container means (5) superposed to said roller (1) and counteracting means (3) and second dough feeding means (6) for feeding dough to said first feeding means (5), said apparatus further comprising at least a sensor (7) for sensing the level of dough in the first feeding means and a closed loop automatic control system operable to control said second feeding means to feed such a quantity of dough to said first feeding means (5) that the level of dough in said first feeding means remains substantially at a set constant value, whereby constant filling with dough of the cavities (2) of the roller (1) is provided.
