<p>Functional materials having excellent thrombolytic effect, SOD function and ACE function which are obtained by culturing bean broth. Sterilized bean broth is inoculated with one of microbial strains TOYO-11 to 13 (Deposition Nos. FERM BP-8011 to 8013) followed by shaking culture. After centrifuging the culture, the supernatant thus obtained is used as a functional material. These functional materials are excellent in the SOD activity (32.7 to 37.2%), ACE inhibitory activity (92.0 to 97.2%) and thrombolytic activity (25.0 FU/g or above) and show favorable taste and properties (in particular, stringiness) in the sensory evaluation as natto (total score: 4 to 5).</p> |
