PURPOSE: A method for manufacturing bread is provided, thereby producing the bread having improved taste and flavor, and retarding an aging rate of the bread. CONSTITUTION: The method for manufacturing bread comprises the steps of: heating milk and salt(S110), adding wheat flour into the mixture(S120), gelatinizing the mixture(S130), and maturing the mixture at low temperature(S140) to prepare a first dough(S100); mixing wheat flour, a dried yeast, a yeast food, a conditioner, salt and water(S210) and fermenting the mixture(S220) to prepare a second dough(S200); mixing the first dough, the second dough, wheat flour, salt, butter, a dried yeast, powdered milk, sugar, an egg and water and kneading the mixture(S310); dividing the dough in a certain size(S320); maturing the divided dough for a certain time(S330); shaping the dough to be suitable for a case(S340); inserting the dough into the case and fermenting it(S350); and heating the dough(S360).
