FIELD: food and chemical-pharmaceutical industries, particularly, technology of producing extract from plant Stevia rebaudiana Bertoni. SUBSTANCE: preparation of extract from plant Stevia rebaudiana Bertoni involves extraction of plant above-ground part, extract cleaning, its evaporation and drying. Before extraction, plant above-ground part is wetted at room temperature for 20-30 h at changing of ratio of water and raw material from 1.5:1.0 to 9.0: 1.0. Raw material extraction is carried out at temperature of 40-60 C for 10-15 min. Wetted water and extract are mixed, and cleaned, and prepared mixture is disinfected. It is conducted in electric coagulator with soluble anode for 4-6 min at current density of 200-400 A/sq.m for formation of coagulant of admixtures in solution containing sweet substances. Then said solution is filtered by means of a filter of fine cleaning under pressure of 40.104-60.104 Pa, evaporated and dried up to after humidity of 1.5-2.0%. EFFECT: reduced price of final product, simplified technology of extract preparation at maintaining it biological properties. 2 cl |
