FIELD: technology of food industry. SUBSTANCE: before mechanical treatment, vegetables included in condiments are treated with a preparation produced by successive extraction of biomass of microorganisms selected from given group, nonpolar extracting agent under above-critical condition, water, alkali, water, acid, water, alkali and water. Then solid residue is combined with the first extract and aged. EFFECT: increased stability of final product to storage life. |
