The present invention relates to a method for preparing an edible stable foam, in which: (a) a foam is prepared from a starting material which comprises a protein; then (b) the protein in the foam is denatured by pH-induced denaturation in such a manner that surface denaturation of the protein takes place, and the stability of the foam is increased. <??>The invention also relates to a foam which is obtained using the method and to a foodstuff into which the foam is mixed. |
