PURPOSE: Provided are a highly polymerized compound which is discolored according to pH-change and a pH-indicator of the kimchi using it. The highly polymerized compound is capable of being applied to kimchi packing material, therefore a consumer confirms the quality of kimchi without opening its packing. CONSTITUTION: The highly polymerized compound which is discolored according to pH-change is characteristically manufactured by emulsifying a pH discolored compound and reactive acrylic resin as main ingredients. And a pH-indicator of kimchi is characteristically manufactured by composing a unit kit by formulating the pH discolored polymer into a film form or binding semi-permeable film, which permeates ion and a solvent, to the surface of a matrix.
