PURPOSE: A process for preparing roasted rib shaped boiled fish paste using bamboo is provided, thereby giving a user the characteristic taste and flavor as if the boiled fish paste is a roasted rib. CONSTITUTION: The process for preparing roasted rib shaped boiled fish paste using bamboo comprises the steps of: mixing fish meat with other ingredients and kneading the mixture to prepare a fish paste dough; covering both ends of a bamboo stick with the fish paste dough; roasting the bamboo stick at 125 to 135 deg. C for 2 minutes, maturing the roasted fish paste of the bamboo stick for 1 minute, and roasting the bamboo stick at 225 to 235 deg. C; cutting the center of the bamboo stick and cooling cut pieces at 20 deg. C for 30 to 35 minutes; and packaging and freezing them.
