PROBLEM TO BE SOLVED: To solve the problem of the structure of water being difficult to know accurately and no method for evaluating quantitatively the structure being established, because water has different structures, such as free water relatively free from hydrogen bonding and water of a stable state having a strong hydrogen bond, and because water changes its state easily even if it is imparted a very low energy. SOLUTION: In this water structure evaluating method, a small amount of salts by which original water structure is not affected, is added to water of an evaluation object to prepare plural salt solutions of low concentrations differing in concentrations, the water of the evaluation object itself and the plural salt solutions of low concentrations are measured in order by a capillary- type water viscometer, absolute viscosity of the each salt solution is measured thereby in the each salt concentration to find out relative viscosity and reduced viscosity in the each concentration, and the water structure is evaluated, based on a correlation between a locus, a slope, an area or a strain and the salt concentration formed on a graph thereby.
