The invention concerns a pressure cooker comprising bistable calibrated leakage means (3, 6) capable of taking up an opening position wherein the continuous rise in pressure of the apparatus beyond a specific pressure (P0) is authorised, while allowing air bleeding of the apparatus or a closing position corresponding to absence of air leakage outside, said opening position being maintained until a predetermined pressure value P1 is reached. The invention is characterised in that said opening position, if it is not maintained until the predetermined value P1 is reached, is maintained for a predetermined time interval DELTA t after P0 is reached or until a predetermined temperature value T1 is reached, and it comprises at least a safety means on opening/closing, whereof the position is pressure-sensitive. The invention is applicable to pressure cookers.
