摘要 PURPOSE: Provided is a manufacturing method for pumpkin vinegar which has the pharmacological efficacies of the pumpkin and shows excellent functionalities, thereby increasing agricultural income. CONSTITUTION: The manufacturing method for pumpkin vinegar comprises the steps of: mixing hard boiled rice, malt, yeasts and a pumpkin solution then followed by fermenting the mixture at 24-28 deg.C for 6-10 days and precipitating it to obtain pumpkin liquor; diluting the pumpkin liquor to 5-6% and sterilizing it at 50-70 deg.C for 20-50 minutes in a fermenter; and inoculating acetic acid bacteria to the pumpkin liquor then followed by filtering the culture broth and sterilizing it.
