PROBLEM TO BE SOLVED: To provide a method for deodorizing long-stored rice, aiming at deodorizing long-stored rice. SOLUTION: This method for deodorizing long-stored rice comprises the following process: adding water to long-stored rice powder, putting the thus obtained mixture into a first steaming/kneading zone, injecting steam into the mixture under the pressure of 0.05 kg/cm<2> -0.1 kg/cm<2> while stirring the mixture at 20 rpm-25 rpm, and steaming and kneading the resultant mixture for several minutes followed by transferring the thus treated mixture to a second steaming/ kneading zone, and then, injecting steam into the mixture under the pressure of 0.05 kg/cm<2> -0.06 kg/cm<2> while stirring the mixture again at 20 rpm-25 rpm. |
