PURPOSE: A manufacture method of a dried fish treated with high molecular weight chitosan and carboxymethyl chitosan during the processing procedure is provided, thereby preventing microorganism proliferation, suppressing fat acidification, and providing high quality of the dried fish having long-term storageability. CONSTITUTION: The method for preparing a dried fish is characterized by that: (a)dried fish is soaked in 0.1 to 2.0%(w/v) chitosan aqueous solution and 0.1 to 2.0%(w/v) carboxymethyl chitosan aqueous solution; (b)0.1 to 2.0%(w/v) chitosan aqueous solution and 0.1 to 2.0%(w/v) carboxymethyl chitosan aqueous solution are sprayed on a processed dried fish; or (c)the dried fish or processed dried fish, which is passed through the above procedure, is coated with chitosan. The chitosan and carboxymethyl chitosan have a molecular weight of 10,000 to 300,000 and a degree of deacetylation of 99 to 70.
