FIELD: meat industry. SUBSTANCE: composition contains soybean isolate, food emulsifier, glucose, modified food starch, ethereal oils and/or oleoresins of spicy-aromatic plants, oleoresins of white pepper, red, green and black pepper, pimento, lemon ethereal oil, ascorbic acid and/or its salts, citric acid and/or its salts, sodium glutamate and/or mixture of sodium glutamate and inosine acid, xanthane gum and food phosphate at definite ratio of components in mas.%. Distilled mono- and diglycerides of fatty acids are used as a food emulsifier. Meat of hen, chicken or turkey is used as poultry meat. Also used as poultry meat are carcasses, legs and large-sized half-finished products from poultry meat. Said composition of food additive improves considerably consistency of final product and increases input of prepared production for 5-10%. EFFECT: improved organoleptical and structural-rheological properties: more expressed taste and aroma, pleasant color, mild and succulent consistency in comparison with similar products produced according to traditional technology. 4 cl, 2 ex |
