FIELD: meat industry. SUBSTANCE: method includes preparation of meat raw material, auxiliary materials and filler, chopping of meat raw material, its brining, chopping of meat raw material on chopper, preparation of minced meat in cutter with introduction of auxiliary materials and with the following stuffing it with filler. Then conducted are final cutting, molding of small loafs, and their heat treatment and cooling. Filler is a mixture of food emulsion, water, common salt and combined food additive consisting of ethereal oils and/or oleoresins of natural spicy-aromatic plants, ethereal oil of garlic, reducing sugars, gelatin, food organic acids and/or their salts, aroma and taste intensifier, emulsifiers, glycerine, and common salt. Used as a food emulsion are ketchup, mustard, sauce and mayonnaise. EFFECT: lower technological and energy expenditures; original taste-and-aroma and ergonomic properties of prepared products. 6 cl |
