PROBLEM TO BE SOLVED: To provide an N-long chain acylamino acid or a salt thereof which can be used as cosmetic raw materials having low odor, improved feeling of use owing to the formation of foam whose foaming characteristics are fine and creamy, excellent oxidation stability, and high degree of safety because of avoiding problems such as mad cow disease, etc., and when the cosmetic raw materials are changed into cream it has high crystallizing point and improved stability at high temperature. SOLUTION: The N-long chain acylamino acid or the salt thereof are represented by the formula (1) (wherein, formula (2) is an aliphatic acid residue in which R<1> has 9-21C and the aliphatic acid residue is originated from vegetable oil, R<2> is hydrogen or a 1-5C alkyl group, and N-R<3> is a residue of an amino acid or a salt thereof). |
