PROBLEM TO BE SOLVED: To provide an inhibitor for the heat of hydration of cement having an excellent effect to suppress the elevation of temperature with the addition of a small amount. SOLUTION: The inhibitor contains a chemically processed starch having a solubility in water at 50 deg.C of <=10% and that at 80 deg.C of 20-50%.
