The substance is conducted in a steady flow through and open narrow tube while the pressure difference between the entrance and the exit of the tube is maintained at 100 Mpa or more. The temperature rise of the product while passing through the tube can be confined to less than 5 DEG C. The method provides a continuous ultra high pressure preservation process suitable for processing foods.
