A method for producing caviar wherein, after slaughtering, salting, optional transport and separation of roe, and separation of brine and refuse, the roe is smoked and processed, wherein whole and damaged roe is smoked in the form of granules and incorporated with an emulsion of oil, water, coloring, potato flour and other conventional ingredients, wherein said smoking may take place as a separate stage for wet-smoking the roe particles in a suspension in water, or it may be done by supplying the smoke directly to the emulsification stage for the roe particles with the rest of the ingredients in the end product. |
