PURPOSE: A process of preparing noodles(myon, Korean native name) using leafy and stem vegetables, particularly, by mixing an extract of leafy and stem vegetables with wheat flour, corn starch, salt or the like is provided. Whereby, the product is good taste and flavor and rich in nutrients. CONSTITUTION: Two or more of leafy and stem vegetables are dried, ground, soaked in water for about 4 hours and then squeezed. Thereafter, the extract is mixed with wheat flour, corn starch, sweet potato starch, salt, spirit, baking soda and an acidulant, formed in the form of noodle web and then slit into noodle strips. |
