PURPOSE: Provided is fermented soybean paste added with meat obtained by aging fermented soybean paste(meju, Korean native name), adding with meat and then ageing. It is rich in nutrients and has a good taste and flavor. CONSTITUTION: The fermented soybean paste is aged in a mixture of saline water, hard charcoal, jujube and red pepper for 20 to 30 days in the first stage to soften the meju. Thereafter, the meju is aged with soy sauce, salt, red pepper in a hermetically sealed state for 45 to 60 days in the second stage and then aged for 30 to 60 days in the third stage after adding meat thereto. |
