PROBLEM TO BE SOLVED: To provide a shrimp material for a tempura (deep fry) and fry having 'an appearance and eat feeling almost not different from one large skinned shrimp'. SOLUTION: This shrimp material is obtained by adhering the side surface of a part in the vicinity of its top end part of trunk of a first raw skinned shrimp of which head part is cut off and tail part is not cut off, with the side surface of a part in the vicinity of its tail part of a second raw skinned shrimp of which head part and tail part are cut off, by an enzyme action of a transglutaminase, and adhering and filling raw shrimp paste in a recessed part of which plane has an approximately triangular shape and is formed between the top end part of the first raw skinned shrimp and the side surface to which side the first raw skinned shrimp is adhered, of the second raw skinned shrimp by the above adhesion, by the enzyme action of the transglutaminase. Also, the shrimp material is obtained by adhering the top end part of trunk of the first raw skinned shrimp of which head part is cut off and tail part is not cut off, with a cut off surface of the second raw skinned shrimp of which head is cut off and middle part of the trunk part is cut (or the top end part of the trunk of the second raw skinned shrimp), by the enzyme action of the transglutaminase each other. |
