FIELD: food industry. SUBSTANCE: ground fat, protein and carbohydrate components are mixed with water and mineral additive, heated, homogenized, and pancreatin is introduced. Mixture is divided into two parts, one of which is subjected to fermentolysis. Both parts are dried, crushed, and mixed during introduction of a preparation. Said preparation is produced by means of successive extraction of biomass of Mortierella marburgensis micromycete with nonpolar extracting agent under above-critical condition, water, alkali, water, acid, water, alkali and water with the following combination of the first extract and hard residue. Before using, said mixture is reduced by water. EFFECT: increased quality of final product. |
