FIELD: food industry. SUBSTANCE: texturizer is prepared by means of successive extraction of biomass of Pythium catenulatum micromycete by nonpolar extracting agent under above-critical condition, water, alkali, water, acid, alkali and water with the following combination of the first extract with hard residue. Prepared product contains, mainly, chitosan and highest fatty acids where eicosapolyene acids prevail. Claimed texturizer stabilizes suspended hard phase in liquid products and emulsions excluding viscosity increasing. The product has no expressed taste and odor, and may be used in composition of a wide range of food products such as beverages, juices with pulp, emulsion sauces, dough, whipped confectionery and sausage products, jelly and jellied meat. EFFECT: broadened range of application. |
