PURPOSE: Provided is a method for manufacturing kimchi added with Hizikia fusiforme containing abundant minerals and alginic acid to increase its freshness and nutrients. CONSTITUTION: The method for manufacturing kimchi added with Hizikia fusiforme comprises the steps of: preserving main ingredients, such as chinese cabbage, radishes and the like, with salts to remove water therefrom; preparing fillings by mixing garlic, ginger, spring onion, salted fish and the like; stuffing the filling into salted main ingredients, wherein Hizikia fusiforme is optionally added; and aging them.
