The invention relates to a process for monitoring acetic acid and/or methyl acetate production in a continuous preparative process by the carbonylation of methanol or a carbonylatable derivative of methanol with carbon monoxide in the liquid phase, in the presence of water and a homogeneous catalyst system, carried out in an industrial installation comprising a reaction zone, a flash zone and a distillative purification zone, wherein the reactor temperature and the feed rate of the methanol or carbonylatable derivative in said reactor are brought under the control, preferably via a multivariable predictive controller, of the carbon monoxide feed rate and at least one of the parameters defining the composition of the reaction medium and/or the vents. The above process is applicable to preparative processes both of the Monsanto type and of the low water content type.
