A process for recovering an amine oxide (in salt form) from an aqueous solution comprises treating a solution of the oxide with an acid that is (a) a non-substituted aromatic sulphonic acid or an alkyl-substituted aromatic sulphonic acid, the alkyl substituent group(s) of which contain(s) from 1 to 20 carbon atoms, or (b) an aliphatic sulphonic acid containing from 10 to 20 carbon atoms, or (c) a fatty alcohol half-ester of sulphuric acid having from 10 to 20 carbon atoms, to form a salt of said oxide, and extracting the salt from the solution with a water-immiscible, polar organic compound that is a solvent for, but non-reactive with, the salt. The invention also comprises salts of amine oxides of tertiary amines of the formula <FORM:0999870/C2/1> in which R1 and R2 are each methyl or ethyl radicals and R3 is an alkyl radical having from 8 to 20 carbon atoms, with acids of types (a), (b) and (c) above.
