FIELD: food industry. SUBSTANCE: ground fat, protein and carbohydrate components are mixed with water and mineral additive, heated and homogenized. After it, pancreatin is introduced, and mixture is divided into two parts, one of which is subjected to fermentolysis. Both parts are dried, crushed, and mixed during introduction of preparation produced by means of successive extraction of biomass of Mortierella spinosa micromycete with nonpolar extracting agent under above-critical condition, water, alkali, water, acid, water, alkali and water. The first extract is combined with hard residue, and reduced by water before using. EFFECT: increased quality of final product. |
