PROBLEM TO BE SOLVED: To provide a new antioxidant agent which can safely be used, namely to utilize physiological actions consisting mainly of the antioxidizing action of a Cortinellus shiitake mycelium extract to provide the new medicinal uses and/or health uses of the Cortinellus shiitake mycelium extract. SOLUTION: This antioxidant agent containing the Cortinellus shiitake mycelium extract is prepared by inoculating Cortinellus shiitake in a solid culture medium containing bagasse as a base material, proliferating the Cortinellus shiitake mycelia, untying the obtained mycelium-containing solid culture medium, adding water and one or more enzymes selected from cellulase, glucosidase, and protease to the unties solid culture medium at 30 to 50 deg.C, crushing and mashing the solid culture medium in the presence of the enzyme to extract the Cortinellus shiitake mycelia extract, and then heating the Cortinellus shiitake mycelium extract at a temperature of up to 95 deg.C to devitalize the enzyme and sterilize the extract. |
