摘要 PROBLEM TO BE SOLVED: To provide a method for desalting soy sauce lees efficiently removing salinity from the soy sauce lees and effectively using the obtained desalted carbonized material and saline solution. SOLUTION: This method for desalting soy sauce lees comprises heating for carbonization the soy sauce lees at 300-800 deg.C, crushing the resultant carbonized material to a material with a particle diameter of <=1 mm followed by eluting salinity therefrom using water or hot water and filtering the resultant liquid to subject it to solid-liquid separation of a desalted carbonized material and a salt-containing filtrate. Combustible gas generated in association with carbonation of the soy sauce lees can be used as a thermal energy source of carbonation. The desalted carbonized material thus obtained can be used as a filter aid and further, the resultant salt-containing filtrate can be used for a soy sauce production through adding salt thereto to adjust salinity.
