PROBLEM TO BE SOLVED: To obtain a bread with improved quality such as having moist softness, an oven spring and volume and both natural sweetness and flavor derived from what flour by using hot-water-kneaded dough. SOLUTION: The objective method for producing bread dough comprises the step of preparing hot-water-kneaded dough by kneading at least par of the whole wheat flour with 40-65 deg.C hot water under heating to a temperature higher than the temperature of the hot water or to 55-70 deg.C and the 2nd step of making the bread dough by using the thus prepared hot-water-kneaded dough. The aimed bread is produced from the thus obtained bread dough.
